Low Carb Blueberry Muffins

Ingredients
Cooking spray
2 Tablespoons wheat(or oat) bran and 1 tablespoon soy flour, mixed
1 cup soy flour
1/2 cup splenda
1 teaspoon baking powder
2 eggs
1/2 heavy cream
1/3 cup club soda
1/2 cup blueberries
Directions
Preheat oven to 375 F
Spray 6 cup muffin tin with cooking spray.
Sprinkle pan with bran/soy flour mix, being careful to coat sides too
In a bowl using a whisk, mix all other ingredients except blueberries until well blended. Fold in blueberries and fill 6 muffin cups evenly. Bake 20 to 25 minutes. Cool before refrigerating.
In place of blueberries you can use raspberries, blackberries,banana extract and walnuts, lemon or almond extract and poppy seeds, cranberries, pumpkin
