Carrot Cake

A dense and moist cake that is awesome!

Ingredients
Cake:
2 cups sugar
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/2 cup oil
4 eggs
3 cups grated carrots

Icing:
1 box powdered sugar
1 stick margarine
1 pkg. (8 oz) cream cheese
2 teaspoons vanilla
1 cup chopped nuts
Directions
Cake:
Sift and mix first 5 dry ingredients. Add whole eggs and oil, mixing well. Add carrots, stir. Bake in greased/floured tube pan at 350 degrees for approximately 1 hour. (cake will be heavy.)

Icing:
Mix all ingredients. Cut cake in half and spread icing between layers, top and sides.
