Zucchini Bread - From Suzie
Ingredients
3 eggs 2 cups sugar 3/4 cup oil 2 cups grated zucchini 3 cups flour 1 tsp soda .5 tsp baking powder 2 tsp vanilla 1 tsp salt 1 tsp cinnamon .5 cup nuts ( optional )
Directions
For best results don't use a metal bowl. Hand mixing works best. Beat eggs, oil, sugar and zucchini. Mix well, stir in dry ingredients. Fold in vanilla and nuts. Pour in two loaf pans or one tube pan. Bake one hour at 325
