Breakfast Cassarole - Jane Rackers

Ingredients
1 lb sausage
9 large eggs, slightly beaten
3/4 cup milk
4 Tb melted butter
24 oz. package hash browns
8 oz shredded cheddar cheese

Preheat oven to 350 degrees
Directions
Layer raw sausage on bottom of well buttered 9 x 13 pan. Combine milk, melted butter and beaten eggs and pour over sausage. Add hash browns and top with shredded cheese. Bake for one hour.

My notes:

Though the recipe calls for using raw sausage, I cook mine first.

I do not add salt to the recipe, but you might want to.

I have used Italian sausage and with was good.

I have not frozen this recipe so I have no idea how it would be after freezing.

The recipe says you can substitute 2 TB of olive oil in place of 2 TB of butter with good results.
