ANZAC stands for the Australian New Zealand Army Corps. These cookies, biscuits as the Aussies call them,were traditionally made as an inexpensive cookie that could be shipped overseas to servicemen. Because there are no eggs in the recipe, these biscuits could survive the journey without spoiling. I think it's one of the best oatmeal cookies I've ever had. They are good on their own or dunked in coffee, milk, or teas Ingredients: 1 cup rolled oats 3/4 cup coconut 1 cup flour 1 cup sugar 1.5 teaspoons baking soda 2 Tablespoons boiling water 1/2 cup butter + 2 tablespoons 1 Tablespoon golden syrup (An Aussie product, half honey/ half light corn syrup works well as a substitute)
Directions
Preheat Oven to 325. Mix oats, flour, sugar and coconut together. Melt butter and syrup together. Mix baking soda and boiling water together and add to butter mixture. Slowly add wet ingredients to dry ingredients. Form tablespoon size balls out of mixture, and flatten onto a greased cookie sheet. Bake at 325 for 15-18 minutes. Cookies will be evenly golden brown. Edges will be crunchy and centers soft. The original recipe says to heap the golden syrup. Just add a little extra honey to the mix
