Ingredients
Dough
2 tablespoons (28 grams) butter, melted and cooled to just warm (about 80°F)
2 1/4 teaspoons (7 grams) instant yeast (1 packet)
1 tablespoon (14 grams) light brown sugar
1 1/2 cups (355 grams) warm water (about 120°F)
4 1/2 cups (572 grams) all-purpose flour
1 teaspoon fine sea salt
Topping
Pretzel salt or coarse salt, for topping
Baking soda bath
6 cups (1422 grams) water
1/4 cup (60 grams) baking soda
Directions
Step 1: Prepare the Dough
In a mixing bowl, combine warm water, melted butter, yeast, and brown sugar. Stir gently until mixed.
Add flour and salt into the mixture. Mix until a rough dough forms.
Knead on a lightly floured surface for about 5-7 minutes until smooth.
Step 2: Let It Rise
Place the dough in an oiled bowl and cover with plastic wrap.
Set aside in a warm place to rise for about an hour or until doubled in size.
Step 3: Shape the Buns
Punch down the risen dough to release air.
Divide into 12 equal pieces; shape each piece into a bun by rolling it on a floured surface.
Step 4: Prepare Baking Soda Bath
In a large pot, bring water to a boil; add baking soda carefully.
Boil each bun for about 30 seconds on each side using a slotted spoon.
Step 5: Bake the Buns
Preheat your oven to 425°F (220°C).
Arrange boiled buns on a lined baking sheet; sprinkle with pretzel salt.
Bake for about 12-15 minutes or until golden brown.
